Organisource Keto Protein Bread Pudding

Not your typical post-workout snack!

One thing to know about me is I HATE protein shakes. Liquid meals and me have never really gone together. However, with the amount of intense training I do all week, I need to refuel with some protein post-workout. So, I created this easy and delicious Keto Protein Bread Pudding using Organisource Keto Collagen Protein with MCT Powder!

Ingredients (one serving):

    1 TBS butter
    1.5 TBS granulated Swerve
    1 TBS coconut flour
    1 scoop Organisource Keto Collagen Protein with MCT Powder
    1 egg
  • 2 TBS coconut milk
  • Splash of vanilla extract
  • 1/4 cup coconut milk
  • 1 TBS heavy cream
  • 1/2 tsp Swerve confectioners
  • Crushed almonds

Directions:

  1. Preheat oven to 400°F.
  2. Mix butter, granulated swerve, coconut flour, protein powder, egg, 2 TBS coconut milk and vanilla in greased mug.
  3. Microwave for 75 seconds.
  4. Cut up into chunks and bake in pan for 10-15 min until crisp.
  5. In small saucepan, boil 1/4 cup coconut milk and turn to simmer.
  6. Mix in heavy cream and Swerve confectioners and let thicken.
  7. Pour mix over protein bread, top with crushed almonds and enjoy!
